All you need to do is add water
It is often thought that the taste of coffee is determined by where it comes from,
and by the refining, roasting and extraction process.
As if the sweetness and distinctive flavor of the beans is refined through a process of “subtraction”.
In fact, all you need to do to enhance the flavor is add water.
With water, it is actually a process of “addition.”
Therefore, we roast the beans to bring out the delicious taste of the water.
Because Ono is a town of water, Ono’s coffee is the only coffee you will find where “something is added at the same time as something else is taken away”.

Because water is so important here, we would encourage you to think about the water when you have a cup of coffee.
If the water is too hot, the coffee tastes bitter. If it is only lukewarm, the coffee has an acidic taste.
Use two pots: one for boiling the water and the other for making the coffee.
Pour the boiling water into the other pot. This will give you water at just the right temperature: 90-92℃.
But coffee made with Ono’s groundwater tastes best.
The flavor depends not just on the make of the coffee or where it is from, but also on the water you use to make it.
